Meat on the Bone
Comfort Food Mains · Medium

This is the first dish Sanji cooks on screen: a deep bowl of seafood rice slid across the Baratie counter to someone who has starved for days. He refuses to let pride skip a meal — if you eat today, you can still look toward tomorrow. That philosophy matters more than luxury ingredients.
The anime plate is hard to read pixel by pixel — pink shrimp, pale squid, egg-yellow rice — so this home version follows the spirit: cook rice first, stir-fry a seafood medley gently, then bind everything in egg fried rice and finish with raw scallion heat off the flame.
It is quick, wok-friendly, and deliberately plain. Sanji would rather feed a hungry pirate than impress a food critic.

Rinse 2 cups koshihikari (or jasmine) rice twice and drain. Combine with 3 cups water in a pot or rice cooker and cook until tender. Spread on a tray for 5–10 minutes so steam escapes — you want fluffy grains before they hit the pan.
Thinly slice 4 scallions and set aside. If using head-on shrimp, peel and devein 1 lb (450 g); if using frozen seafood medley, thaw, drain, and pat completely dry.
Heat 2 tbsp neutral oil in a large skillet or wok over medium-high. Add seafood in one layer with a pinch of salt. Stir-fry until just opaque — shrimp pink, squid firm — then transfer to a plate. Do not overcook; it returns to the rice later.
Beat 6 eggs with 1 tsp kosher salt until even. Heat 2 tbsp neutral oil in the wok until screaming hot. Pour in the beaten eggs and scramble them quickly into soft curds, then immediately transfer them to a plate. Wipe the wok, add the remaining 2 tbsp oil, and stir-fry the cooked rice on high heat for 3–4 minutes until individual grains dance and toast.
Return the scrambled eggs and seafood to the pan. Toss vigorously 1–2 minutes until evenly distributed and heated through.
Turn off the heat. Add sliced scallions immediately and toss so their flavor infuses without wilting. Taste for salt, then serve in deep bowls while steaming — the way Sanji slides it to a starving customer.
Cook rice completely before frying — warm rice is fine here (unlike day-old cha han). Scramble eggs separately, toast rice alone on high heat, then combine — that keeps grains separate instead of steaming in raw egg. Do not overcook seafood in step 3; it returns with the eggs in step 4. Fold scallions in with the burner off so they stay bright.
Eat piping hot like Sanji serves it. Leftovers refrigerate 1 day; reheat in an oiled skillet.
Nothing fancy — a ladle of barley tea or water matches the Baratie mess hall. Save celebration sake for after the crew eats.
