Red miso (aka miso) is fermented longer than white miso, producing a saltier, earthier paste that stands up to boiling — essential for Naruto's miso ramen, long simmers like beef stew, and bold glazes on Food Wars-style proteins. Color ranges from brick red to deep brown; darker usually means longer fermentation and stronger flavor.
When buying, check the ingredient list: ideally just soybeans, rice or barley koji, salt, and water. Avoid sweetened or "instant miso soup" packets when a recipe calls for paste by the tablespoon. Hatcho miso from Aichi Prefecture is a prized single-grain soybean variety with intense depth. Sendai miso and Shinshu miso are common regional styles with balanced salt.
