When shopping for mirin, the label matters more than the brand. True hon-mirin (本みりん) lists no added salt and typically shows an alcohol content around 14%. It is brewed from glutinous rice, koji, and shochu — not simply sweetened cooking wine. Hon-mirin adds glossy sweetness and depth to teriyaki, simmered dishes, and the broth base in many anime-inspired recipes like Yor's beef stew and Ichiraku-style ramen tare.

Aji-mirin (味みりん) is the budget alternative found in most supermarkets. It contains salt, sugar, and sometimes corn syrup, which means you cannot use it 1:1 where a recipe calls for hon-mirin without oversalting. If aji-mirin is all you can find, reduce any added soy sauce by roughly one-third and taste as you go. For authentic Japanese home cooking — the kind shown in Spy x Family and Food Wars — hon-mirin is worth the upgrade.

Look for bottles imported from Japan with minimal English text and kanji-forward labels. Takara, Mikawa, and Sumiya are reliable producers. Avoid anything labeled "mirin seasoning" or "mirin-type" unless you understand it is salted. Store opened hon-mirin in the refrigerator; it keeps several months when chilled. Unopened bottles last a year or more in a cool pantry.
